A buttery hand pressed shell filled with classic French frangipane almond cream folded with butter and eggs until golden and fragrant slices of pear that have been soaking for days in a homemade spiced syrup. Vanilla beans, black pepper , warm spices, and a touch of lemon.
Sisi says: “This one takes the longest to make and it shows. the pears go into the syrup days before you ever taste this tart, soaking slowly until the spices become part of them. The black pepper is my touch. People always ask what that warmth is at the end and I say : ”That’s the Dominican Republic in a tart.”
Ingredients:
Tart shell: All-purpose flour, unsalted butter, sugar, egg yolk, salt, orange zest
Frangipane: Almond flour, unsalted butter, sugar, eggs, Italian almond extract, all-purpose flour
Spiced pear: Fresh pear, sugar, honey, black pepper, vanilla beans, cloves, bay leave, fruit pectin
